Jenny's Fried Quinoa & Veggies

1 tbsp.olive or coconut oil
1 cup Broccoli, chopped
3 carrots
1/2 cup onion
1/2 - 1 bell pepper,chopped
1 egg lightly beaten
Braggs Liquid Amino (this is like soy sauce only gluten free)


Prepare quinoa according to package directions. I use chicken broth in place of the water. Once made, set aside.

Heat oil in a large skillet or wok. Add veggies and cook until crunchy-tender. Once veggies are cooked to your liking, make a well in the middle of the pan and pour the egg in. Mix the eggs and the veggies until the egg is cooked.

Add in the quinoa and stir. Once well mixed add the liquid amino to taste. Keep in mind that the liquid amino are salty so add a little at a time. Remove from heat and serve.

This is a very forgiving recipe that can be altered to your tastes. Enjoy!
